Coconut Yogurt Hempseed Parfait

Ingredients:

  • 1 Cup Organic Coconut Yogurt (dairy-free, I prefer Cocojune unsweetend)
  • 1/4 Cup Organic Raspberries
  • 1/2 Banana
  • 1 tbsp Homemade Almond Butter
  • 1 tbsp Organic Hemp Seeds
  • Handful of Macadamia Nuts

Zucchini Pesto Omelet

Coconut Yogurt Hempseed Parfait

For the Pesto:

  • 1 Cup Organic Cilantro, chopped
  • 1 Cup Organic Parsley, chopped
  • 1/4 Cup Shelled Pistachios
  • 1/4 Cup Organic Olive Oil
  • 1/2 tsp Salt
  • 1/2 Lemon, juiced
  • Garlic Powder to taste Mix all ingredients in a blender.

For the Omelet:

  • 3 Organic Pasture Raised Eggs
  • 1 Small Shallot, chopped
  • Pinch of Salt and Pepper
  • 1/2 Organic Zucchini, chopped
  • 1 tbsp N

For the Pesto:

  • 1 Cup Organic Cilantro, chopped
  • 1 Cup Organic Parsley, chopped
  • 1/4 Cup Shelled Pistachios
  • 1/4 Cup Organic Olive Oil
  • 1/2 tsp Salt
  • 1/2 Lemon, juiced
  • Garlic Powder to taste Mix all ingredients in a blender.

For the Omelet:

  • 3 Organic Pasture Raised Eggs
  • 1 Small Shallot, chopped
  • Pinch of Salt and Pepper
  • 1/2 Organic Zucchini, chopped
  • 1 tbsp Nutritional Yeast

Instructions:

  1. Preheat skillet over medium-high with avocado oil.
  2. Sauté zucchini and shallots until desired texture.
  3. Set aside veggies in a bowl.
  4. Beat eggs in a bowl, adding salt and pepper to taste.
  5. Pour eggs into the skillet, add veggies and nutritional yeast, and fold the egg over to close the omelet.
  6. Spread pesto over the omelet & enjoy!
