Flourless English Muffin

Ingredients:

  • 1 Organic Flourless Cinnamon Raisin English Muffin (Food For Life Ezekiel 4:9 English Muffin, my choice)
  • 2 tbsp Organic Almond Butter
  • 1/4 cup Organic Blueberries
  • 1/2 Banana

Avocado Deviled Eggs

For the Avocado Mixture:

  • 1 Ripe Avocado
  • 1/2 Lemon, Squeezed
  • Salt & Pepper to taste
  • Chili Powder to Taste
  • Garlic Powder to taste Mash all ingredients together.

Instructions:

  • 2 Boiled Eggs
  • Slice boiled eggs in half and scoop avocado mixture on top. Add additional spices to your liking.

Walnut Tofu Burrito Scramble

For the Scramble:

  • 1/2 Cup Organic Sprouted Firm Tofu, Crumbled
  • 1/4 Cup Organic Zucchini, chopped
  • 1/4 Cup Organic Red Pepper, chopped
  • 1/2 Shallot, chopped
  • 1/4 Cup Walnuts, chopped
  • Season with onion powder, garlic powder, paprika, salt, and pepper to taste.

Other Ingredients:

  • 1 Grain-Free Burrito Wrap

Instructions:

  1. Preheat the skillet over medium-high heat with avocado oil.
  2. Combine tofu, zucchini, red pepper, shallot, and spices until you achieve the desired texture.
  3. Transfer the mixture to a bowl and add in walnuts.
  4. On the preheated pan, warm up the burrito wrap.
  5. Mash avocado with lemon onto the burrito wrap.
  6. Transfer the scramble to the burrito wrap and roll.

Note: My choice of burrito wrap would be Siete Grain-Free Burrito Tortillas.
